Information: The basic Classic is an excellent machine with a professional group head and a steam wand capable of making excellent textured milk. Once you get the basics right, the classic modded to 9 bar, can produce fantastic espresso and with a good grinder and fresh beans can beat most of the coffee shops. However, following a good guide is essential to great coffee. Ratio and timing are key. The grinder plays a huge part and is more important than the coffee machine. I can offer guidance on this too. If on a budget opt for a quality hand grinder as you certainly get more for your money.

The Classic comes with pressurised baskets (use with poor grinders or pre-ground coffee) and unpressurised baskets (to be used with good quality grinders). The Gaggia basket allows you to fit around 14/15g of coffee. Even though you may hear lots of information talk about using 16g or 18g of coffee, this is when you upgrade to using a precision basket. Let the machine fully warm up:
Firstly, always allow the machine to warm up for a good 10-15 minutes. Even though the temperature light will state that it is ready, you need the steel group head & to be as hot as possible to maintain the water temperature as it passes through the group head and into the portafilter. I always advise allowing the empty portafilter to sit and warm up too, so attach this to the machine as it warms and then add the coffee once you are ready to start the brew.

Modification-Why Modify?
With modifications, the Classic can produce coffee on par with machines costing £3000, when paired with a good grinder and fresh coffee. Temperature and water pressure are key elements to the extraction of coffee. The modifications, provide far better consistency and control over these two key aspects of coffee making. They also allow you to make small adjustments to extract different flavours. The dimmer will also allow you to pre-infuse. This helps reduce channelling and allows you in many cases to grind even finer, for even greater taste.
The GaggiMate mod-Pressure profiling, automated shots, powerful steaming and accurate temperature. This mod can make the classic outperform almost any machine and has functions only seen in the highest end of machines.

PID-Professional Temperature control
(If you have ordered a PID, you may find some small fuses in a bag. Please keep these safe)
This allows you to control temperature and if I have installed this, it will come fully programmed, ready to use. You can just leave and let it do its job or you may wish to tweak the temperature should you be unsatisfied with the taste of a particular coffee (but get dose and timing right first, as this is crucial.) It’s set at 93 degrees and this is great for medium roasts. If you have a light roast consider increasing by a degree or two to see if you can achieve better flavours. If you have a dark roast, you may achieve better results by dropping the temperature to 92.
The PID always takes a few minutes to stabalise, so still wait the 10/15 minutes before using. Also when pulling a shot don’t wory if the PID temp drops a few degrees. As long as your group head is red hot, the water hitting the puck will be more than fine to extract the great flavours in your coffee bean.

Using a dimmer:
A dimmer allows you to pre-infuse and control the water flow/pressure. If your pressure gauge is not reaching 9 bar, then your grind is too coarse.
If installed, the dimmer and gauge will have been fully tested and 9/10 bar at maximum setting will be achieved if you grind fine enough.
Although using 9 bar is generally the commercial standard, many professionals have discovered that lowering the pressure can produce even greater flavours.
NB. The dimmer should not be used for longer that 50 seconds in one single go. However to make a good coffee you should never exceed 35 seconds, so this should not be a problem.
Important-When dialling in beans, do not use the dimmer at all (put it to max). Once the beans have been dialled in then introduce the pre infusion element.

If a PId is installed, there are also a couple of fuses inside the box. Keep these safe, should anything happen to the PID. If you can’t find them or lose them don’t worry, we can arrange if you ever need them.

Good beans, a good grinder and weighing in and out (whilst timing) is hugely beneficial if you wish to have coffee taste that beats any coffee shop.
